We had a fantastic growing season for vintage 2022, with mild warm days and cool nights throughout which produced fruit of great depth of flavour and intensity.
The fruit was picked in the cool of the night before being swiftly destemmed to ensure minimal colour pickup.
The juice was then fined and the clarified before being fermented with two strains of known yeast.
One is for mouthfeel and the other is for fruit lift. After a cool ferment the wine is the filtered and bottled to retain freshness.
