The 2023 growing season was cool throughout, ensuring slow, even ripening and flavour development.
The grapes for this wine were picked in the cool of the night, then the fruit is processed quickly in order to retain it ’s freshness. The clarified juice is then fermented to cool to preserve it’s lifted notes. The wine is left on yeast for less than two months to create it’s distinct mouthfeel before being filtered and bottled.
